Like menus in restaurants hospital menus need to do a job. They must stimulate interest first and deliver nutrition second. In a restaurant nutrition is not a consideration and here lies the conundrum for hospital chefs.
Hospital patients need nutrition. However, they also need to be presented with food that is both appealing and recognisable. When patients are ill, as everyone has experienced themselves, the first thing that they want to eat is something comforting. This is an important consideration for any kitchen team.
