Whereas Josep Pla (El què hem menjat, see Bibliography) is an enthusiast, as I am, for grilling fungi on live braise and eating them with a piquant sauce, Mercè Sala proposes a tantalising list of fungi dishes which must excite both interest and appetite in many less ‘neolithic’ cooks.

She has collected these dishes from old Catalan domestic recipes; from recent Catalan cookery books and republications of 19th century works (see Bibliography, Part II) others from good friends, personally explained; and some which she has created herself. The list of these dishes below is somewhat reduced so as not to bemuse the reader.
