Using the Kamado

Enough with the theory already. It’s time to fire up your kamado! In this chapter, we will give you some pointers, but beware—even two models from the same brand can have subtle differences in use. You will have to get used to your own grill. Expect a half-dozen or more uses before you are comfortable with the kamado’s own character. Only then will you get an idea of how best to work with it. In the meantime, we present you with an overview to get you started.
