Now that you understand the basic principles of lighting and regulating temperature in a kamado, it’s time to apply them. In this chapter, we discuss thirteen techniques in great detail and will provide a basic recipe for each technique.
First, we will teach you all the various ways of grilling, and then we will discuss using the heat shield. As we incorporate the heat shield for recipes, we steadily increase the temperature for each dish until we’re at pizza temperature. After pizza, we will discuss combination techniques and a few special techniques like “caveman style” and chicken on a vertical roaster or poultry stand.
