When grilling, a cast-iron grid works best with a dome temperature between 390 and 460°F (200 and 240°C). In most kamados, the grid is placed about 12 inches (30 cm) above the charcoal.
The grids from the Primo and Grill Dome are placed at a greater distance from the charcoal, although these brands allow for grilling closer to the fire box with the lower grid.
Due to the radiating glow of the charcoal, the grid will be hotter than the surrounding air. Above these ideal temperatures, the grid will become too hot, and the grease that has seasoned the grid will start to smolder. You’ll get black stripes on your food.
