As I have said all along, great dishes are easy to make, it’s just a case of having an understanding of timing and making the effort to get the ingredients in the first place.
At the restaurant we spend an enormous amount of time in conversation with our suppliers to ensure that we are fully versed and have our ear to the ground. It’s thanks to them that we are able to use some of the most amazing ingredients available, and here are some pages to introduce you to a few of them. Some are small independent suppliers, others are large well-developed companies, but all have an underlying sense of pride and dedication to great food.
