  • Frozen leaves are more likely to break than fresh leaves, even when they’ve been heated. Have extra leaves handy in case you need to layer them.
  • If you are unable to source banana leaves, you can substitute ti or bamboo leaves. But if you’re unable to find any leaves for the recipes in this chapter, parchment paper is a good substitute, particularly when wrapped with additional aluminum foil to lock in moisture and juices.
