Chef, Mangerie (Bebek) and Delicatessen (Nişantaşi)

Ten years ago Elif Yalin opened her first restaurant in Istanbul: Mangerie in the chic neighbourhood of Bebek. Then came another, Delicatessen, in the bustling neighbourhood of Nişantaşi. Both of these establishments are elegant, open to the street and lively, just like their chef, who reinterprets Turkish food to offer a delicate new cuisine that is all her own. In her dishes, she says, you find the Black Sea where she comes from, the seasons and her instinct. She is inspired by tradition, and by the present as well.
