The central regions of Italy have a colourful history that dates as far back as the Bronze Age, if not further. From the legend of Romulus and Remus to the spread of the Roman Empire, the story of central Italy, with Rome at the heart, is universally known. The influence of this glorious city was felt not only in the surrounding area of what is now Italy, but also far and wide across the world due to the spread of the all-powerful Roman Empire. After the decline of the Empire, the region was controlled by other powers, which led to many new dishes and ingredients being incorporated into the local cuisine. Sardinia’s isolated position, meanwhile, has created a unique history that is illustrated in its architecture and food culture.
