Deep-frying is a fundamental cooking skill that is rarely practiced at home in much of the modern world, largely due to an unwarranted demonization and a tendency to overcomplicate the process. Contrary to popular belief, properly fried food does not absorb an excessive amount of oil and fat. No one bats an eye at a bruschetta drizzled in olive oil, which, bite for bite, is certain to contain more added fat than a deep-fried cutlet.
Frying is simple and requires no special equipment. All you need is frying oil, a suitably sized pot or pan, and (perhaps) a slotted spoon.
