It has now become almost unusual to have a meal where someone, either family or guest, is not wholly or partly vegetarian. Even among those who still enjoy eating meat there are many people, like me, who really enjoy an all-vegetable meal from time to time.
Creating vegetarian dishes has become much easier now that there is such a wide and inspiring variety of ingredients to choose from. I pity the vegetarians of years ago, who seemed to live on endless dishes made with stodgy brown rice. Now a Mediterranean, Eastern or Far Eastern touch can make vegetarian meals far more exciting and less repetitive.
