Without flour we would not have bread, chapatti, roti, naan and so many other delicious foods. On the subcontinent, flour is not just flour, and comes from a multitude of plants: rice, millet, lentils, chickpeas, maize and potato, to name a few, and even within the category of wheat flour there are several different types. Flours are often marketed according to their purpose, such as chapatti flour and idli flour. Read the label if confused.
