Nuts and dried fruits feature extensively in subcontinental cooking. Drying fruit greatly extends its shelf life, and because most of the water has been extracted, their nutrients are more concentrated; however they are also high in sugar, so should not be eaten in large amounts. Nuts are also highly nutritious, and rich in healthy fats. Try to buy organic dried fruits and nuts, to minimise exposure to preservatives and chemical residues.
