Storing Crustaceans

Crustaceans should be very fresh. If sold ready-boiled they may be overcooked and of questionable freshness. They are best bought alive, preferably from salt water tanks, and the more vigorously they move the better. At home they can be refrigerated in a plastic bag of dry ice, or in an insulated box filled with damp seaweed. For storage time,individual species.
