On opposite sides of the world are two curious crustaceans The Australian Balmain bug found in Sydney Harbour is a tiny flat lobster, with a similar flavor and delicate texture. Its broad shell is large in proportion to the meat. The European mantis shrimp popular in Italy and Spain, has distinctive mouthparts and legs like a praying mantis. Both creatures can be cooked like prawns. Often, Balmain bugs are sold pre-cooked.
