Removing Sinews from Game & Poultry

Turkey, goose, mature duck, chicken and game birds have large sinews that must be removed from the leg before drawing. Locate the sinews lying along the bone and pull them out with pliers.
Slit the leg skin with a knife and locate the sinews. Insert a sharpening steel underneath the sinews and twist it round to break them. Continue turning until the sinews are pulled completely from the leg meat. Trim the leg.
