Plants that yield edible seeds in a pod, often consumed after drying, are known as legumes and include beans, lentils and dried peas. As a source of food, they are second only to cereal grains in importance. Rich in proteins, fats, carbohydrates and minerals, they often take the place of meat in a vegetarian diet.
