The most famous of all batter preparations must be crêpes whether served by themselves or as wafer-thin wrappers for a wide variety of foods. Savory crêpes lend themselves to fillings—from grated cheese, cream cheese and scrambled egg to sumptuous sweetbreads moistened with a sauce, or caviar and sour cream. Sweet ideas range from a sprinkling of sugar and liqueur or a filling of jam or chocolate—often rolled into a “cigarette” crêpe to be eaten with the fingers—to fresh fruit mixtures. Crêpes can be piled one on top of the other, sandwiched with filling, then cut in wedges like a multi-layered cake.
