Testing Tempered Chocolate

After tempering, remove a small amount of chocolate and spread it on a marble slab or cooled plate. Let it harden, while keeping the remaining chocolate at the right temperature and stirring it often. If the test chocolate sets smooth and glossy, it is ready. If there are gray streaks in it, temper again.
