Nuts are difficult to define botanically. Technically, they are one-celled fruits with a dry shell, but only hazelnuts, chestnuts, cashews and acorns fall within this narrow scientific definition. Other nuts we eat are in fact edible kernels from which the fruit wall has been removed (almonds, walnuts, coconuts and macadamia nuts); some are seeds (Brazil, pistachio and pine nuts); or legumes (peanuts). Nuts are highly nutritious and full of flavor. Except for peanuts, their cost makes them a relative luxury, but even in small quantities, nuts are a valuable cooking ingredient.
