Testing Pectin

In a bowl, mix one tablespoon of cooked unsweetened fruit juice with one tablespoon of 70 percent rubbing alcohol.
Swirl the liquid on a plate for a couple of minutes until it starts to clot. Push your finger into the solution; a large clot indicates high pectin, while small lumps indicate a low pectin level.
