There are many ways of freezing fresh fruit depending on the type and what you intend to use it for. As freezing will soften fruit, choose very firm pieces for anything other than a purée.
Tray freezing is excellent for small fruits such as blueberries or raspberries that keep their shape well. Strawberries tend to collapse: sprinkle them with sugar to keep them firm. Arrange the fruits on a tray so they do not touch each other and freeze until firm, two to four hours. Put them in freezer bags or rigid containers, eliminating as much air as possible, and freeze again.
