Molds are used for many jobs in the kitchen and are made of various materials suited to different tasks. For example, ice cream and gelatin dishes require metal molds that allow the food to be released when heat is applied. Molded chocolate, however, which is pushed out of the mold and must not be heated, is often set in flexible plastic or rubber molds. Dishes that are served directly from their mold, especially those requiring long cooking such as rice pudding, can be made in earthenware or glass.
