I am passionate about producing sustainable, seasonal, local food. You’ve got to look after and respect the land, not rape and pillage it. By managing farmland sustainably, we can continue producing protein without damaging the ecological balance. We have been farming in the Carneddau mountains for over 350 years, and still have rare flora and fauna in abundance, which our Welsh mountain sheep can forage for and in turn produce delicate and subtly flavoured lamb and mutton. I believe it’s the best in the world.
