Some people panic when they don’t have milk or butter in the fridge, but I’m anxious if I don’t have a bag or bundle of quick-cooking greens or tender vegetables that can be stir fried, grilled or sautéed in minutes to make dinner more vibrant.
Tender and delicate leafy vegetables really get me animated these days, because they’re often the most exciting thing to eat on the table. Sure, they require some preparation (no one likes gritty or watery greens) and a touch of magic with complementary flavours like chilli, garlic and lemon, but once you’ve mastered a few techniques, there’s a whole world of thrilling dishes that will make you want to weave a portion of greens into every meal.
