All the recipes in this chapter work off loosely shredded chicken from the leftovers of your roasted bird. After the chicken cools slightly, use your fingers to pick off as much of the meat as you can from the bones. It’ll be a bit messy, but it doesn’t take too long. Try not to include the skin or too much fat or cartilage. Shredded chicken will keep fine refrigerated in an airtight container for 5 days. If you want to store the chicken longer, keep it whole (7 days roughly), or freeze the shredded chicken and it will be fine for a few months. Use the carcass to make Roast Chicken Stock.
