It’s a bit hard to give one recipe for lentils. There’s a wide range of varieties, and all of them have slightly different textures and cooking times. The most popular ones in the United States (at least where I’ve lived) are the green and red lentils. You can also find French (puy) lentils and a few other varieties at some specialty stores.

It doesn’t matter which variety you choose to use for the recipes in this chapter. They all work, but just vary a bit by taste and texture. Sometimes I even like to cook two different kinds and mix them up to make a multi-lentil dish.
