If I had to pick out a dorky kid of the food world, it would probably be tofu. It’s usually by itself in the grocery store, pushed way back on a dim shelf, neglected and alone. People are always taking cheap shots at it and laughing behind its back.
Much like how the dorky kid in school always grows up to be a millionaire model superhero (or food blogger in some cases), tofu is finally having its moment in the sun. People are starting to appreciate that it’s not only for vegetarians. They are beginning to realize that, bang for the buck, it’s one of the most versatile things you can buy in the grocery store. Maybe most important, people now recognize that it can be delicious.
