Most cooks would tell you that you shouldn’t strive to have a lot of leftover fish in your fridge. Most types of fish don’t keep well, and it’s true that fish tends to be at its best when it’s fresh (or cured). But, if you cook fish regularly, you’ll inevitably wind up with some extras. Maybe a dinner guest didn’t show and you’re left with a spare fillet, or one of your kids just flat-out refuses to try fish. It would be a serious shame to toss the extras because of neglect, so I felt it would be fun to show you a few ways that I use leftover fish on the few occasions that I have it.
