Lucky the farmer who raises chickens and has day-old eggs! In large cities, fresh eggs are more of a rarity nowadays than is ever realized. The best quality eggs found on the market are Graded AA, Fresh Fancy quality. If at all possible, these should be used for feeding infants and young children and for poaching since they were graded within the past ten days.
  • Grade AA eggs are more than ten days old.
  • Plain Grade A may be as old as three weeks or more.
  • Grade B, in my opinion, should not be used, even in the making of dishes in which the eggs are mixed and cooked with other ingredients.
