Large roasts usually come already prepared by a butcher or supermarket meat department, but it is important to know how to remove the fat and connective tissue covering in order to limit fat intake.

To Remove a Rib Roast from the Ribs This procedure applies to rib roasts of beef, veal, and pork as well as to rib racks of lamb.

Using a knife with which you are very comfortable (boning knife, short chef’s knife, or larger paring knife), cut along the backbone and rib structures, separating the muscle attached to the bones gradually and neatly.
