All birds can be trussed with or without a trussing needle. The trussing needle gives a better shape to the bird because its legs will cover the tips of the breast and prevent them from drying out while cooking. Turkeys and smaller birds are mostly trussed without a needle.
TRUSSING POULTRY WITH TRUSSING NEEDLE
Pass the needle through the body from thigh to thigh, leaving a 6-inch tail of string.
Turn the bird over and pass the needle through the wings and neck. Tie both ends of the string together here, pulling hard on the strings.
