How you store ice cream is just as important as how you make it. Opening and closing your kitchen freezer causes a big temperature change and can affect whatever you are storing. In the case of ice cream, that temperature fluctuation creates not-so-pleasant ice crystals on top. To avoid that, store your ice cream in the back of your freezer. It’s the coldest part and will be the least susceptible to the temperature changes. (But honestly, you should just eat your ice cream as fast as you can!)
The same rule applies to transporting ice cream. You want to make sure that it is not exposed to too many temperature changes. How you pack your ice cream for transport will depend on how long you will be in transit. If you will be traveling for 30 minutes or less, you can tote your ice cream in a regular shopping bag. For periods of 30 to 60 minutes, it’s best to place the ice cream in an insulated bag. For 1 to 2 hours, put the ice cream in a cooler filled to the top with ice. This advice is good for pints or quarts of ice cream but will not work for ice cream desserts, such as ice cream cakes or pies.
