Kinilaw is a selection of fresh products, soured and combined in the moment, specific to the exact moment and place. These vary with the season and region, and the dressing is unique to the person creating it. Still, the basic “pantry” of seafood, souring agents, fruits, and vegetables in the different regions of the Philippines can be condensed to the following:

Seafood: oysters, clams, crabs, small shrimps [suaje], abalone, sea cucumber, squid, and sea urchin

Fish: grouper, milkfish, tanigue, swordfish, pompano, tuna, kingfish, and dorade
