Lumpia are spring rolls, either deep-fried or fresh. Deep-fried lumpia filled with ground pork are called lumpia Shanghai (the pork filling in all probability generated its Chinese nomenclature). Other versions filled with a combination of vegetables (usually cabbage, carrots, green beans, and sometimes bean sprouts) and flavored with pork and shrimp are generically called lumpia. Lumpia Shanghai are served with a sweet and sour dipping sauce, while other lumpia are dipped in vinegar and minced garlic, sometimes spiked with ground black pepper or chopped chiles.
