Pampanga is one of the oldest provinces of the Philippines with a history that is very much intertwined with that of Manila. It is known for its food, and Kapampangan cooks are highly respected by Filipinos. I visited the Guanzon family in Sta. Rita, Pampanga, where we were able to photograph that day’s batch of turrones de casuy and sans rival by the Lansang Delicacies bakery. Then I was off to stay a few days with Claude Tayag and his wife, Mary Ann, in Angeles, Pampanga. Claude built his beautiful home from wood and other material he rescued from churches and old homes that were being demolished.
