The “arm of Mercedes,” as it is literally translated, was an adaptation of the Spanish “Brazo de Gitano,” or “arm of a Gypsy.” How an arm of a gypsy with a sponge cake base became Mercedes’s lightweight meringue wrap enveloping egg yolk, butter, and syrup filling becomes moot once you taste this favorite Filipino dessert.
