Salabat, along with hot chocolate, are the two most traditional beverages served during Christmas. Salabat is native and therefore served with kakanin [native desserts] such as suman or bibingka, while hot chocolate is foreign (from Spain and Mexico) and served with ensaimada or other sweet fried doughs such as gollorias or churros [deep-fried fritters for breakfast or merienda].
