Fresh out of the army, I had to find a job. In those days, hotels would offer internships where, in exchange for work, they would pay tuition at a technical college. The idea of the hospitality industry appealed to me, so I went to every hotel I could find in Cape Town trying to find work, but day after day I would return home, unsuccessful in my attempts to find a job.

As I look back, a defining moment in my career was the first time I walked into the foyer of the Tulbagh Protea Hotel. It wasn’t the fanciest place around, to say the least, and they had no vacancies for a management intern, but the breakfast chef was on a four-month sabbatical and they needed someone to fill his shoes.
