The docket printer delivers different stories at different times. It’s a sound that resonates with every chef. That bzzzz, bzzzz, bzzzz. When you’re a young chef, it means the start of service and you absolutely shit yourself. As you get more and more confident in the kitchen, it almost fires you up. It doesn’t matter how old you are or how experienced you are; when things are absolutely crazy, we all hate that docket printer and start shouting at it and at the restaurant manager. The orders just keep coming in. The anxiety builds with every bzzzz. The faster it spits out orders the more anxious we all get and you don’t know if you’re going to make it through service. The shit just gets deeper and deeper. As you get older, it signifies that you’re busy and you feel grateful to have the business – but it still freaks you out.
