I always equate standing at these fires at Marble and cooking all day as braaing for 250 of your closest friends. Every night. Without being able to have a beer. It’s thirsty work.

I fuckin’ hate recipes, and I love chaos. I’d rather have a mystery basket of ingredients to create with than a recipe I have to follow. Chaos to me is energy, creativity, instinct. It is the place where ideas are born and you cook from your gut. It’s the place soul food comes from.

In Greek mythology, chaos is the primeval state of existence from which the first Gods appeared. In other words, the dark void of space that is made from a mixture of what the ancient Greeks considered the four elements – earth, air, fire and water. Every chef knows that damn dark void of space from which they have to bring the four elements to life in order to create perfection on a plate. Or at least try their best doing it.
