Our tongues can discern five basic tastes: sweet, salty, sour, bitter and umami. Flavour, however, combines taste and smell: we register flavour through our nose almost as much as our tongue, which is why if you have a cold and your nose is blocked, you won’t be able to taste well. The tastes our tongue senses are roughly defined as follows:
