Distillation involves heating a mixture of ingredients, typically water, alcohol and flavour – and converting them into vapour then cooling and condensing them back into liquid. There are two means of distilling: large-scale stills use atmospheric distillation, in which the liquids have to come to high temperatures to evaporate and became a vapour. We use a rotary evaporator for all our distillation which distills in a vacuum. The vacuum allows you to boil liquids at lower temperatures without any oxygen – it is the most gentle and controlled way of distilling something and prevents ingredients from oxidizing.
