I often find that vegetarian dishes are either not given enough thought or far too much, and are totally overdone with too many garnishes. My feelings about all dishes are that nothing should be added unless it’s going to enhance the flavours.
All our eating habits and moods change. Whenever I have a ‘pub lunch’ (and it’s not often enough!) I always go for the vegetarian dish of the day. It’s usually a vegetable cottage pie, pasta dish or quiche and I always enjoy it.
A quiche is easy and simple to make, so I decided to make a feature with vegetarian tarts all using the same base mixture. The scope is endless; so many different flavours can be added to give totally different results. Another dish that also has a lot of variety is a vegetarian crumble, these can be complete meals on their own or accompaniments to a main course dish.
