Fruit is plentiful and varied. The market stalls glow with the brilliant colours of bananas, peaches, sweet lemons, mangoes, melons, figs, watermelons, pomegranates, grapes and apricots. When fruits are in season they are served both at lunch and dinner, piled high on plates or, when it is hot, in large bowls surrounded by ice. Each person dips his fruit in an individual finger bowl of ice-cold water.

Fruits are sometimes served in the Persian manner, grated and mixed with crushed ice and scented water. They are also stewed and sometimes stuffed.
