This list covers the key ingredients used in this book, and is by no means a comprehensive inventory of Japanese, Asian and Latin American food products. You will not be required to purchase all of the ingredients listed, but to attempt most recipes you will need a handful of basic Japanese and South American ingredients, including soy sauce, mirin, dashi, rice vinegar, miso and short-grain rice. These ingredients make an appearance in many of my recipes and once you master their use, you are on track to enjoy some truly authentic Japanese and Nikkei dishes.
