Britain is a pie country. You’ll find pies in the pub, at the bakery, at the butcher, at markets, at fairs and at home. Although the whole of Europe made meat pies during the Renaissance, it is in Britain that they remain firmly engraved in the identity of the cuisine and culture. A pie can be sweet, savoury or both, as in the meaty mince pies that give you a taste of medieval flavours when the boundary between sweet and savoury had not yet been determined.
