For chicken feet, use a pair of kitchen scissors to cut off the nails. If there are any hard or rough pieces of scaly outer skin, hold them over a gas flame or use a propane torch to blister and loosen the pieces and then rub them off with a towel.

A cow’s foot is big, so ask your butcher to cut it into sections using his band saw. While they are usually clean when you buy them, give them a rinse and check to make sure there are no tufts of hair. If you find any, singe it with a propane torch.
