The desserts at the Paramount Restaurant are translated as architectural offerings on the plate: visual appeal and fantasy complement texture and taste. Many of my ideas are drawn from the architecture and design that surround us in our everyday lives - I find it a challenge to transform an idea into a tangible and edible art piece without compromising that most vital component, taste.
This chapter reveals how some of the recipes that feature on our menu are created. It asks that you familiarise yourself with the basic techniques and methods used and gives an insight into and understanding of what motivates my work. With time, patience, reading, practice and confidence you will be able to create these desserts for yourself.
