In 1985 Christine Manfield abandoned the safe haven of a teaching career to pursue an ambition of perfecting the art and science of cooking in the professional arena. She started life as a chef in the South Australian seaside town of Robe before moving to the Petaluma Restaurant in the Adelaide Hills. Restaurant life became a consuming passion and in 1988 it led to Sydney and a lifetime of experiences packed into two years working for Phillip Searle at his groundbreaking restaurant Oasis Seros. In 1990 and 1991 Chris and her partner Margie Harris opened two hotel dining rooms, then in July 1993 the stunningly designed Paramount Restaurant became their focus and set culinary standards that continue to be lauded by the critics. Now recognised as an innovator of a truly Australian culinary style, Chris is much in demand as a demonstrator and speaker at wine and food conferences and gatherings throughout Australia.
